- 600g caster sugar
- 300g egg whites (about 10)
- 3 tsp orange blossom water
- few drops orange oil
- 60g finely chopped pistachios
Put sugar in a large pan in a thin even layer and heat until sugar is hot and begins to dissolve at edges. While sugar is heading whisk egg whites in a mixer on high until they begin to froth up. Carefully pour the sugar onto the whisking whites, then add the orange blossom water and continue to mix for 10 minutes or until the meringue is cool, thick and silky. Heat oven to 110 degrees, dollop meringue onto baking trays and sprinkle generously with pistachios. Bake in the oven for about 2 hours until the outside is firm and the center still a little soft. Leave them to cool and store in an airtight container. Makes 12 large meringues.
